Matcha is produced from green tea leaves that are dried and then slowly ground between granite stones until they become a powder. The green tea plants (Camellia sinensis) used to produce Matcha differ in both the way they are grown and the way they are processed. Close to the harvesting period, the plants are covered for at least 3 weeks and continue to grow protected from the sun. After harvesting, drying (again in the shade) follows, at which stage the stems and leaf 'nerves' are carefully removed. This process (covering, drying & removal of stems & 'nerves') increases chlorophyll levels, gives the final product its characteristic deep green colour and induces the production of amino acids, in particular thiamine.

An element of Japanese culture since the 11th century (its preparation, production and ritual consumption, especially in tea ceremonies) has been an integral part of life in ZEN monasteries to this day.

A very key element to properly enjoying Matcha and approaching ZEN status is the preparation and process of turning the precious powder into a beverage. Calming down, clearing the mind from the daily routine, using the right utensils (bowl & wooden stirrer) is sure to help.


The qualities of Matcha

 The grades of Matcha powder vary, with Ceremonial Grade being at the top. The grade is determined by the quality of the leaves used (new small leaves are considered the best), the speed at which the plant grew (the slower the growth rate, the better) and the time the plant remained covered. The degree of oxidation that the powder has undergone by the time it is packaged is also a determining factor. The grading is done by Matcha tea masters.



How Matcha is consumed

 In recent years the use of Matcha has spread and in addition to tea making, it is also used in cooking/confectionery. Matcha can be enjoyed in a cup of hot water like a cup of tea, with hot milk, in nutritious smoothies, in healthy homemade desserts or even food. You would need to drink a total of 10(!!!) cups of "regular" green tea to achieve the nutritional power of just 1 serving of Matcha. Matcha tea has a pleasant earthy taste with a surprisingly sweet aftertaste that lingers on your palate, making it, the essential daily drink/drink/ingredient of choice.


Method of preparation

Ingredients: 1 teaspoon of Matcha powder and 225 grams of water, at a temperature of 80 degrees Celsius

  • Slowly add some of the hot water, stirring until it becomes a sticky mass.
  • Now add more hot water until the cup is filled to the desired level, stirring until the end.
  • Whisk until foamy and make sure it is well mixed.
  • Drink and enjoy, with confidence!

Other ways to use Matcha: Try mixing Matcha with water in your blender to create a drink/smoothie. You can also experiment with adding almond milk or other beverages of your choice, such as coconut milk.
